Today
I’ll be showing you how to make Desi Chicken Gravy and Dry Chicken (i.e chicken
sukka)...
1. Onions
2. Dry
Coconut
3. Kashmiri
Red Chillies
4. Coriander
Powder
5. Chicken
Masala
6. Turmeric
8. Poppy
seeds
9. Chana
10. Garlic
11. Black
pepper (grinded/crushed)
12. Coriander
Leaves
13. Chicken
(1 kg)
14. Salt
to taste
Let's Begin the Prep......
In
a vessel, take chicken (I am using 1 kg chicken, you can modify it as per your
need).
Add
turmeric and salt in the chicken. (This step will enhance flavours to our
chicken ).
Keep
this aside for at least 15 mins.
Place
a vessel on medium flame and add oil in it.
Now
add onions and saute well. (do not turn onions golden brown, just fry the
onions till they are transparent).
Put
chicken pieces in it.
Now
mix this carefully.
Cook
it on a medium flame.
Till
the chicken cooks, lets prepare masala...... ☺
Take
a kadhai/ pan & Add 10 to 15 kashmiri Red Chillies.
Roast
them. (This step will help our ingredients to leave their moisture.
Moisture-less ingredients will grind well).
Similarly,
Repeat
the same steps with Chana, coriander seeds, Garlic and poppy seeds.....
(make
sure to roast all ingredients individually).
Take
them on a plate and let them all cool......
Once
cooled..... remove the caps of the red chillies.....add all ingredients in the
grinder and grind well......
Now
for a desi flavour, we will place onions and dry coconut directly on gas stove
(for eg: as we do for tikka).
Be
careful while doing this step.
We
will get to know that the onions and dry coconut has been cooked when they turn
black in colour from all the sides.
Remove
them and put them into the grinder.....
[TIP: Peel the Onions a lil bit but no
need to cut the onions]
Grind
it into a fine paste.... add little water only if you require.....
(it
should form a thick paste)
Add
coriander leaves in the grinder for good flavours.....
Now
add coriander powder, chicken masala and salt in the paste and again grind them
well.....
Grind
till it becomes a smooth paste....
Keep
it aside....
Once
the chicken is cooked, add around 1 tsp of black pepper (crushed/ grinded).
Now,
put some oil into a kadhai and add all the chicken pieces into it.....
Over
it we will add chicken masala and some coriander powder......
Mix
properly.....
Transfer
½ of the pieces in the same vessel in which we boiled them.... keep it
aside....
In
the other half, add half of the masala that we had made earlier..... mix well
and let it boil.....
Garnish
with coriander leaves.....
Your
dry chicken/chicken sukka is ready....
For
Gravy:
In
the same kadhai, Add remaining masala (we kept aside) mixed with around 1 glass
of water.
Add
these in the vessel in which we have kept chicken.
Mix
it & let it boil......
Garnish
with coriander leaves....
Your
Chicken Gravy is Ready.....
